(A Madeleine is a small rich cake, baked in a shell-shaped mold named after Madeleine Paulmier, a 19th-century French pastry cook and made famous by Marcel Proust (1871-1922) in his autobiographical novel Remembrance of Things Past. He wrote: "She sent out for one of those short, plump little cakes called 'petites madeleines', which look as though they had been moulded in the fluted scallop of a pilgrim's shell.
