Looking nothing like traditional bakeware but borrowing many of its best characteristics, Lekue's Madeleine pan cooks evenly, releases food easily, and is made of FDA-approved food grade silicone. The pliable silicone construction carries many advantages such as immediate cool-down, the prevention of burnt edges and crusts, and a foldability that extends storage options. With a slightly shorter cooking time, the pan bakes nine 2-by-2-3/4-inch tasty treats--complete with the traditional Madeleine shape and ridged texture. Nonstick surfaces help food to release easily but greasing is still a good idea--especially if regularly being washed in the dishwasher. Freezer-, microwave-, and oven-safe up to 500 degrees F, the pan seamlessly transitions from cold to hot. Contact with direct heat sources such as burners or hotplates should be avoided and sharp metal tools can damage or cut the material. Other pans have to be meticulously buttered and floured,NOT THIS pan. Just pour in your batter, bake ,POP out, and reuse. I will buy silicon bakeware for everything! Clean up a breeze! Loved , loved, loved this pan! This review is from: Lekue Silicone Flex Bakeware Madeleine Pan (Kitchen) I debated whether to get a metal or silicone pan for madeleines. I've had metals ones before and they had a tendency to rust, so finally decided to try the silicone bakeware this time around. I am very, very happy with the results. The cookies didn't stick at all, I barely oiled the molds (and only once, the remainder of the batch I found I didn't need to), they came out perfectly and were a hit with the family.
